Veggie Pasta Sauce

For all my meal-prep lovers out there… I have the perfect pasta dish for you to try! Mixed with so many healthy and delicious veggies, this veggie sauce adds an unique twist to your meal. Taking only 30 minutes to cook, you need to add this into your weekly meal-prep!

Pasta is my go to meal for many meals. In between busy classes and work in my every day schedule, boiling a pot of pasta is so quick and simple, that it’s hard to pass up! However, I like to try a lot of new ideas and combinations in my meals, and there are only so many nights a week I can have pasta with marinara sauce. That’s where this veggie pasta sauce comes in handy. Tasting similar to a vodka/blush sauce, but packed with so so many healthy veggies and spices, it serves to be a unique sauce to spice up dinners, while also secretly supplying your body with vegetables!!

INGREDIENTS

  • 1 butternut squash

  • 1 cup cherry tomatoes

  • 2 bell peppers (red, yellow or orange)

  • 1/3 full onion

  • olive oil (to taste)

  • 5 cloves minced garlic

  • red pepper flakes (to taste)

  • salt (to taste)

  • pepper (to taste)

  • garlic powder (to taste)

DIRECTIONS:

  1. Preheat oven to 350°

  2. Chop up butternut squash into 1x1 inch cubes and place in 13x9 pan (Be very careful! Butternut squashes are a little on the firm side when cutting)

  3. Chop up tomatoes, peppers & onion and place into pan

  4. Drizzle olive oil over vegetables until lightly covered

  5. Mince garlic, and spread on top of vegetables

  6. Shake salt, pepper, garlic powder & red pepper flakes over vegetables (to taste)

  7. Cook in oven for ~30 minutes (until vegetables are softened and mushy)

  8. Pour mixture into blender and blend until smooth and creamy

  9. Add to pasta

  10. ENJOY!

Pop this into the oven and let the magic happen. One thing I love about cooking with garlic in this recipe is the amazing smell that comes out of the oven for the duration of this dish! Great for the stomach and the nose!


So creamy, smooth and delicious! This could also be easily eaten as a thick soup, or dipping sauce for grilled cheese. It’s creamy nature makes it quite versatile for different uses. This has become my absolute favorite way to make pasta sauce. Not only does it give you the added nutrients from all the vegetables, but you can’t even taste them! Add chicken or chicken sausage for an extra protein boost!
