French Toast Casserole
French toast is one of my favorite breakfast meals. My mom would always make a french toast casserole in the crock pot for holiday’s so it’s always been a staple in my breakfast adorations. As a college student I don’t have access to a crock pot, nor do I have the funds to get one … so I took matters into my own hands and crafted an oven only recipe for a delicious french toast meal!
RECIPE:
Base
1/2 cup softened butter
1 cup packed brown sugar
Bread
1/2 loaf of stale bread
6 eggs
2 cups milk
2 tsp vanilla extract
1 tsp cinnamon
Topping
1/2 cup crushed pecans
powdered sugar (to taste)
brown sugar (to taste)
DIRECTIONS:
Preheat oven to 425°
Simmer softened butter and brown sugar on medium heat until mixture is smooth
Cut up stale bread into small cubes
Pour this onto a 13x9 pan, immediately placing stale bread pieces on top
Whisk together eggs, milk, vanilla and cinnamon in a medium bowl
Pour mixture over bread, making sure that it’s covered completely!
Sprinkle crushed pecans on the top
Cook for 25 minutes at 425°
Add powdered sugar on top

I enjoy this recipe because while it’s quite easy to make, it’s also very customizable! You can use all different types of bread (as long as the slices are stale), which could make your french toast experience interesting! Chocolate bread, rye bread, cinnamon swirl bread … there are so many avenues you can take to craft this casserole to your liking.
As an avid breakfast lover, I like to be able to eat a few different bowls of various breakfast foods to satisfy whatever I’m craving. My go to with french toast is grits! I use quick grits and add butter and brown sugar to the top … clearly a sweets lover! My drink of choice is an iced matcha, which compares nicely to the sweetness of the other food items. It’s slight bitterness intertwines perfectly with the intense sweetness of the other items!
