The Breakfast Cookie
Scrolling on Instagram quite some time ago, I stumbled upon a page run by a woman named Nicole Addison… and let me tell you, she has changed my food life for the better. She runs a nutrition account focused on easy and accessible breakfasts, desserts, snacks and meals, to which I quickly found a liking to. As a college student eager for easy recipes to make with little time required, these recipes were like candy to me. I simply can’t get enough.

Yes, you read it right, a cookie for breakfast. Cliche but magnificent. Not only is this time friendly to make, but it doesn’t require a multitude of ingredients. Formulated with quick oats, baking powder, melted coconut oil, banana, milk and protein powder, it provides a proper source of nutrition as well as an amazing taste. It’s light and fluffy, while remaining dense and packed with all sorts of flavor. I leave it in the air fryer a little bit longer than the recipe calls for, to give it a little extra crispiness on the outside. This only adds to the vast number of reasons I crave this meal incessantly.
Recipe
Ingredients
1/2 cup quick oats
1/2 medium mashed banana
1 teaspoon baking powder
1/2 scoop protein powder
1 tablespoon melted coconut oil (or melted peanut butter)
1 tablespoon milk
A sprinkle of cinnamon
A small handful of chocolate chips
Instructions
Preheat air fryer to 360°F (or preheat oven to 350°F).
Mix all ingredients except for the chocolate chips in a small bowl.
Form batter into a round ball and press into a cookie shape in the basket of the prepared air fryer (spray lightly with cooking spray) or on a prepared cookie sheet.
Add chocolate chips on top and gently press them into the top of the cookie.
Air fry for about 8-10 minutes (or bake in the oven for 15 minutes)

My favorite part of this meal is the customizing it leaves room for. I’ve had fun in my mornings experimenting with different fruits and protein powder combinations to give the breakfast cookie some spice (but not too much spice because I have learned the hard way that chili powder looks a lot like cinnamon).
A few combinations I’ve tried and loved:
Pumpkin protein powder, cinnamon and walnuts
Chocolate protein powder, peanut butter and chocolate chips
Vanilla protein powder, white chocolate chips and raspberries
Peppermint protein powder and dark chocolate chips
Strawberry protein powder and strawberries
Vanilla protein powder, walnuts and blueberries
Vanilla protein powder, peanut butter, sliced apples, cinnamon and walnuts
Chocolate protein powder, peanut butter and hazelnut Nutella drizzled on top
As I grow in age, I have come to the conclusion that my taste in food makes no sense. I love tomato sauce, bread and cheese separately, but don’t care much for a plain slice of cheese pizza. I love bread and cheddar cheese, but the thought of grilled cheese gives me chills. I have given up on trying to decipher why my tastebuds play tricks on me and learned to accept that I need to simply listen to them and find the insanely specific food combinations that I like. The breakfast cookie has been the thing I enjoy messing around with the most, and it led me to discover a lot of flavor combinations that I use every day now.
Through the very long rabbit hole I have gone down trying to experiment with food and everything that comes with it, I have learned to always create a meal catered to what you specifically like. It took me awhile to learn the painfully obvious fact that not everyone has the same taste buds, and that if I blindly follow recipes exactly without trying things out myself, I will never truly figure out what I enjoy the most.
