Breakfast ideas worth trying!

PEPPERMINT CHIP OAT PANCAKES

  • 3/4 cup quick oats

  • 1/2 cup flour

  • 1 scoop vanilla protein powder

  • 1 egg

  • 1/2 cup almond milk

  • 2 tbsp maple syrup

  • 2 crushed Ghirardelli peppermint bark chocolate squares

This is my twist of overnight oats, bringing together quick oats and peppermint squares into one amazing pancake. In spirit of the holidays I made them peppermint themed, thanks to Ghirardelli. They are so so easy to whip up, and packed with nutrients and protein. I am a firm believer that breakfast is extremely important to kick start your day, and this is the perfect meal for it!

To cook, simply mix all the ingredients together, and pour your preferred amount in a pan with butter on med-high heat. Cook until she’s golden brown and a little crispy. On top is whipped heavy cream and extra crushed peppermint (of course).

These are quite dense, not light and fluffy like your typical pancake, so if that’s not your vibe these mayyyy not be for you! I almost burnt my apartment down testing this one out, so my most important piece of advice is do not even attempt olive oil or vegetable oil despite the internet saying it’s okay lol. This recipe makes about four pancakes.


BREAKFAST COOKIE MUFFINS (nourishedbynic recipe)

  • 1 cup oats quick, minute or rolled all work

  • 2 medium mashed bananas

  • 3 teaspoon baking powder

  • 1.5 scoop protein powder

  • 3 tablespoon melted coconut oil see notes below for substitution

  • 3 tablespoon milk if needed

  • large sprinkle of cinnamon (to taste)

  • small handful of chocolate chips or walnuts

MMMMM. A twist of Nicole Addison’s (@nourishedbynic on Instagram and TikTok) viral creation of the 10 minute air-fryer breakfast cookie. If you have not heard of her or seen her work, look her up and try a few. She was my initial nutrition inspiration, with so many healthy recipes to try. I stumbled upon this recipe of hers long, long ago, and it lead to so many new creations of mine. My family and I rely on this recipe a lot for breakfasts and have a lot of fun creating new versions of it.

The version I’d like to bring to you guys is a MINI version… muffin style! I tripled her breakfast cookie recipe and mismatched a few things to create a peanut butter, walnut, and cinnamon blend of deliciousness.

To bake, I mixed together all ingredients in a mixing bowl, then cut up parchment paper into small rectangles. I used these as liners in the muffin tin as a substitute for spraying cooking spray, then cooked them in the oven for ~10 minutes at 350°

MIXED BERRY CRUMBLE YOGURT

Berry compote:

  • 1 cup mixed berries (I use bloobs & raspberries)

  • 1/2 tsp vanilla extract

  • 1/2 tsp honey

  • Splash of lavender syrup (optional)

Oat Crumble

  • 3/4 cup quick oats

  • 1 scoop vanilla protein powder

  • 1/2 tsp chia seeds

  • 2 1/2 tbsp maple syrup

  • 2 tsp cinnamon

Greek Yogurt Topping

  • Plain greek yogurt

For the final product I added a very generous sprinkle of cinnamon (A LOT)! Where crispy meets smooth and creamy, this simple breakfast is to die for. There are so many different aspects of sweetness, yet the plain greek yogurt gives it a tang to make sure its not overly sweet. I had a lot of fun with testing out this recipe, it’s quite easy to make if you have 10 minutes to spare:)

Blueberry Compote - Mash berries in a small pot, add vanilla, honey & lavender, boil on medium heat until thickened and smooth

Oat Crumble - Mix all ingredients together in a bowl and microwave for about 30 seconds, twice!
